When using column chooser on order lines in the customer order tab I mistakingly deleted all columns. When I right click now, the column chooser option is disabled.
How do I restore the column chooser?

How did you solve it? This just happened to someone in my organization.
Right click on the left top on the list to open the menu with Column Chooser again. (If you have a + sign there it might take some time to get the right position.)
