When Shop order is created through project Delivery, operation number is missing on the shop order material tab. User has to update the operation number manually on the Material tab after shop order creation. Is this the standard behavior of the IFS Application or is there a way that we can make the application fetch the relevant operation number?

Project Product structure in project delivery is not same as the product structure which we define for the standard shop orders. So, there is no way to identify which component will be directly mapped to the product structure in manufacturing. Additionally, Project Product structure in project delivery allows user to add additional operations if required. Because of these reasons, one to one mapping cannot be done for material and operation in project delivery connected shop orders. That is why IFS application is not directly taking operation number to shop order material tab but allows users to select it instead. This is the standard behavior of the IFS Application.
