We want to develop integration from an external supplier invoice system to IFS Cloud. We need guidence to what API to use to post purchse order invoices to IFS Cloud.

IFS REST APIs are atomic by design.
A structured supplier invoice must be split into multiple REST calls, normally via middleware (Boomi, Logic Apps, etc.).
