I try to figure out how the SAs can assign a product as a component on an Item when they add the material themselves on Mobile - is the only option to go to Item - Component - Add Component (+)?

I am going to refer you to the Mobile Edge 15.4 User Guide.pdf where these processes are all described. Specifically, read pages 266-268. In short, the answer is yes, this is the way to add a component.
