Is it possible to add additional fields to the emails which can be sent out of Alliance in v15.4.8 or above?
An example would be adding the Caller Phone and Email address to the email body

This is for the service order report or other similar email outputs, correct?
If so, this can only be added by code customization as even if you add the placeholders to the message definition, the DAL used also has to be updated to include that information so can insert the values into the placeholders.
Please create a Services request if you wish to look into customizing the standard report emails such as these.
What you can do is modify the layout positioning of the fields or fixed text in the body but not add new fields without a code change to the DAL.
