When user long presses in the Stock screen, the options to move stock are displayed. Is it possible to remove access to one or more of these options, whilst leaving access to others?

Unfortunately, the context menu items on the Stock screen are hard-coded and not configurable.
Use of the features may be blocked by certain configuration changes. For example, if you wanted to prevent the users from doing Add Part or Remove Part, but wanted to allow Swap Part, you could change the ADJUSTMNT_REASN Sync Rule to only sync adjustment reasons that allow transfers. Then if a user got to Add Part, no adjustment reason could be selected and the transaction could not occur.
