For Shop Orders we have function “Mass update Shop Order structures” which you can use for component replacement in many Shop Orders at once. Do we have the same function for DOP Orders?

There is no such function available in DOP.
But you can do certain adjustments to many DOP Orders using the DOP Orders window,
