Is it possible to add more categories to the Customer Category field? if so How?

I think for an exisiting field (lov)(core), if you want to add more options you need do it via a code fix. It’s not possible to configure from the application side straight away.
Additionally you can introduce a custom filed, connected to a custom enumeration. If that meets your requirement.
