This can be done by editing the Vehicle Id on the Vehicle Tab in Serial Structure info

Important to note that no history record of the change is created in a specific view in the VIM module, but the change is reflected in the Part Serial Record, which can be accessed from the RMB Part Serial on the Part Serial Catalog Tab.
