After rolling costs for multiple items simultaneously, the inventory valuation was affected in an unintended manner. Is there a way to rollback a cost roll?

Do another cost calculation as before and copy costs to cost set 1 is the way to get it done. If you have copied the cost set 1 to another cost set before the latest Copy Costs to Cost Set 1, then that copied cost set can be re used to restore the costs. If you do not have a saved Cost Set for previous Cost Rollup, then you could refer Part Cost History Detail to get information on the previous values.
