  • If yes, how do we know which structure will be applied when raising a PO for sub-contracting?

Hi,

Yes, you can have more than one structure. You can use the alternates here:

The alternate "*" is the default setting. If you want to use a different alternate , you must change it manually in the PO.

But can we have the 3 structure active in the same time? And how can we choose the structure we want in the PO?

Yes of course, you can have more than one alternate in the same time:
 

And here you can change the components which were defined from the structure:

 

Currently, I am still trying to find out how to use an alternate other than the alternate '*'. See also my entry here.
