Is it possible to create a Kit - Part Number, that will relieve inventory of all the parts that make up that kit?

Did you try with “Package Part” setup ?
It is like a bundle of parts you can actually packaged in to a single pack (Kit). This package could be even sell as a single unit in the customer order.
