We would like certain order types to be set as a default depending on the User.

Yes, its possible adjusting individual personal profiles.
Load the personal profile in your IFS application, go to order types make changes and save profile.
Load another profile make changes, save.
Order Types are set per customer. You could use Coordinators and Coordinator Groups with Sites per User.
Once the above has been done, you can indicate the Default Coordinator ID under Sites per User.
