How to change the bank account used for posting in Mixed Payments and Customer Bills of Exchange

In both the Mixed Payment and Customer Bills of Exchange screens, the system automatically posts transactions to a specific bank account.
Could you please advise how we can change the bank account setup that controls which account is used for posting?
