We are currently having issues wrapping text dispatched to our field personnel on their iPhones devices.
They see a single line that they cannot scroll across to the end. This is for Task Description, Notes, Inventory Description

This is a known issue and working by design.
On some of the fields, you might find a 3 dots button. Click it to expose the whole field value.
Besides that, I think the number of characters is limited in the code, so you would not see long values in any case.
Another option is to flip the device to horizontal mode. This might expose the whole value.
