How can I modify the information that is shown in the pop up box displayed when an Activity is clicked on or hovered over? Our Dev & Production systems differ, yet I cannot find the parameters that can change these.

Have a look at Administration>Lists:
I have highlighted the ones that you are probably most interested in. After applying your changes a simple browser refresh will be enough to see the results.
