I would like to know if there is any way to automatize the document approval once all steps have been approved as on the image below?
Is there any standard management or someone has already implemented a custom event about it?

That should be possible using a custom event as long as the last approve has admin access on the document revision. Otherwise you will break our business logic/rules.
