Once B.O. won, ideally the fields need to be accessible to everyone, if it is possible.

If you refer the below value in the form - business opportunity then it takes the value from below method call.
However I couldn’t see the security check in the client level and therefore I doubt whether the request is achievable in the security setting in the permission set. And also you need to have the visibility field and the column with the BO status. Then those need to be written in the client code and I didn’t notice that kind of logic in the existing core client code provided by the IFS .
You may need to get a customization done for the requirement. And also as you too mentioned you can achieve that by changing the visibility in the profile. However that cannot be controlled by the BO status.
