It is possible for each Account Contact to define his/her manager :

Thanks to that, is there a way to display the organization chart of the customer in IFS, showing who’s in the team of who ?

 @CDE there’s no out of the box Org Chart for the Customer Organization. Anyways if you need the info as an overview, it’s available in Account Contacts.

If you need more than this, I guess your IT could create a Quick Report and re-arrange the info as needed via SQL.
