Where do I update the supplier info to show that they are a diverse supplier? i don’t see it in the Supplier Record.

What do you mean by ‘a diverse supplier’?
We would be able to share our thoughts if you can further explain your issue.
Supplier Diversity is not still showing up in core version, perhaps a quick solution would be to add a custom filed (or a dropdown) to show diversity options as required for the business.
There are other categorizations like Supplier Stat Group and Supplier Category which is there for completely different groupings.
