Where do I update the supplier info to show that they are a diverse supplier? i don’t see it in the Supplier Record.

Supplier Diversity is not still showing up in core version, perhaps a quick solution would be to add a custom filed (or a dropdown) to show diversity options as required for the business.
There are other categorizations like Supplier Stat Group and Supplier Category which is there for completely different groupings.
