Is there a way to add the severity field, so that we can sort?

It does not appear that Severity is available on the Resolved Orders queue. If this is a requirement, I suggest opening a ticket for review.
This is likely to be a customisation to the Resolved Queue QBE. Please log a ticket so that the development effort can be estimated. It can then be added as a field within the QBE selection, as well as a column heading and lastly, also within the Excel export.
