We are looking into using components on Items, but it is imperative that the SAs can see item components on the work orders. How do we activate this?

Check the Workflow (Mobile) module in Alliance, is the Use Components setting enabled there?  If not, try flipping that and doing a logout/reinitialize/log back in on mobile afterwards, see if that helps.
