We are facing the issue where the interval from our Shop Floor Workbench Filters is not looking at the manufacturing calendar. We have for example an interval of -10 days in the past and 3 days in the future. This is causing issues on the Fridays where users are not able to see the planning for Monday and Tuesday.
Is there a fix/workaround for this issue?

In early versions, Site was not mandatory in the filter section, so it would have impossible to know what manufacturing calendar to use.
In Apps 10 site is mandatory, hence I agree with you, it would be more useful if the interval related to work days according to the Site Manufacturing Calendar.
Maybe you can put a support case to IFS requesting this to be fix for coming releases?
If you need to have it fixed now I believe it must be done as a small customization.
