When using multiple Servers in a farm, how would we know which server would process the schedule process? How does FSM make sure that no 2 servers are running these processes at the same time?

any of the available Application Servers can pick up the schedulded process. You can’t determine/influence which Server will execute it.
The alternative is to move the scheduled process to a Integration Monitor schedule instead, which allows you to specify the Application Server which it will run on. That way you can distribute the load for schedules accross multiple machines.
