I have a question regarding access not on a sole document, but on a document folder for defined users. So, is it possible to setup access for a user for the whole document folder instead of just setup the access for a sole document itself?

It's not possible to define or control the document access on a folder.
I'm sure something can be hacked together with a combination of document folders, person groups and custom events. Or you can define your own (custom) access check method in the document folder API (or a new custom API) and enable that for access control (as in Object Types for Access Control).
