We have started using CRM and identified that we have had situations where two users enter the same opportunity themselves (making 2 opportunities), we’d like the ability to merge these opportunities and everything associated to it into one opportunity.

In current design of the application (even in APP10 UPD 10) you cannot merge 2 business opportunities.
Anyway you can raise a support case toward IFS and ask if this can be implemented as a bug or as a new development.
