Is there a way to capture who created the transport task? Currently we have some struggles where the user processing the transport task may have questions or such. At this time we have not been able to find any fields that are storing the requestor/creator.

If the Transport Tasks are originated from any sort of order, then you should be able to find who is responsible for the particular order (the order sourcecan be found in Compiled view). If that is possible, I think you can use a Custom Object to view the requestor directly in Transport task window. Or if you have any lobby to view these tasks.

Found below information from a previously logged case,
It is not valid just to enter the user ID for identification of the creator of transport task. This is because once a transport task has been created, there is nothing that prevents other users, or automatic processing, to add a lot more “goods to be moved” onto the same task. This might not at all have been the intention of the original creator of the transport task, still his/her name would be stamped on the transport task even he is not accountable for the changes made after. So it is not sufficient.
But can provide a different solution here, to track whatever the changes made on transport tasks. For that user need to have super user access. Follow below path.
1. Solution Manager > Monitoring > History > History Log Configuration
2. Open 'History Log Configuration' window. There you can see different folders under 'Setup History Log' column.
3. Expand Inventory folder
4. Expand transport task line folder > Click on 'TRANSPORT_TASK_LINE_TAB'
5. Enter any large value on space 'Remove history older than (days):'
6. Then add ticks on Log Insert/Log Update/Log Delete for any heading (under column name) which needs to track and save
As an example, if you add ticks on 'QUANTITY' and then you can check who the person do the quantity changes on transport task.
To check it you need to open 'History log' window and under the 'INVENT' component you can see the changes made on transport tasks and who did it.
