It would be of great help if someone could tell me if it's possible to uncheck the MRP planning checkbox for certain items by default.

If you want a part to be ignored by MRP you can disable the MRP Control option.

This will be checked by default when customer order lines are created and when customer order is released. I don't think we have an option to uncheck for some parts by default.
One option would be to create a custom event to uncheck these check box for the part belongs to particular sales group, product group, product family etc.
