I have two sites. One of them the customer orders wanted ship date is defaulting to the day of. The other is defaulting to the next day. I have to make them both for the next day. Any ideas on how this can be achieved? It must be set up somewhere but I have not been able to find it yet.

I guess you can use the different lead time concept. One option is to have pick lead time 1 vs 0 in respective site if it should be in general for all Customer Orders in the site. You could also use the external transport lead time in case it depends on customer you deliver to.
Picking Lead Time can be configured in different level e.g. on site level, supply chain matrix level
External Transport Lead can be configured in supply chain matrix.
Delivery Route with stop time could also be an option, perhaps?
