Could someone please advise.

 

When there are changes to the customer  order line(s) is the history of the change recorded anywhere.

eg. in the event of the customer order line being cancelled is the date it was cancelled recorded.

if the qty changes on the order line is the change recorded along with what it was changes from and to.

etc.

 

Or is it a case of switching on History Logging.

RMB on the customer order line > Order Line Details > Order Line History which is usually more detailed than the header history as it picks up date changes, pricing and discount changes, and cancellation.  No History logging needs activated for the out of the box piece unless there are specific other field changes you want to track, but these won’t show on the customer order history or line history, will have to be from the History Log.
